Coconut Sweet Bread





Ingredients
3 cups flour
3 tsp baking powder
1/2 cup or 4 oz. margarine (softened)
2-2 1/2 cups grated coconut
1 cup granulated sugar (or brown sugar)
1 cup raisins
1/2 cup chopped cherries
1/2 cup mixed peel
1 tsp cinnamon
1 tsp almond essence (or vanilla essence)
3/4 cup milk (or water)
1 egg beaten



Method
1) Sift flour and baking powder. Add margarine, coconut, sugar, raisins, cherries, mixed peel; mix thoroughly.
2)  Combine milk, egg and almond essence. Add the combined liquid to the dry ingredients and mix until the liquid is incorporated. Do not knead.
3) Pour in greased loaf pan. Bake in preheated oven at 325 degrees Fahrenheit for 50-60 mins or until tester comes out clean.
4) Remove from oven and glaze with mixture of 1 Tbsp brown sugar and 1 Tbsp warm water. Return to hot oven for 3-4 mins.

Can sprinkle with granulated sugar and add glazed fruit to top

Hops Bread


Makes 10-12

Ingredients
2 1/2 cups hot water
1 tbsp. shortening
2 Ibs. or 8 cups flour
2 tsp. salt
2 tsp. granualted sugar
1 pack or 1 tbsp. instant yeast

Method
1) Stir hot water & shortening until the shortening melts and the water is lukewarm.
2) Combine in a large bowl 6 cups flour, salt, sugar and yeast.
3) Place on floured surface and knead for 5 minutes adding remaining 2 cups flour until dough is moderately stiff.
4) Place dough in a greased bowl, cover with a towel or cling wrap and let rise until doubled (approx 35-45 minutes)
5) After dough has risen, punch it down then form into balls 3" in diameter. Place on greased baking tray, cover with a damp cloth and allow to rise until doubled (approx 35-45 minutes)
6) Bake in preheated oven 400 degrees Farenheit for 15-20 minutes
